Cleaning Tips for Range-Stove Tops
There are several different top configurations for commercial ranges, and each top has to be cleaned in a particular manner in order to maintain its cooking efficiency.
Cleaning a French cover. Spot clean throughout the day to wipe up any spills and maintain heat transfer. At the end of the day, wipe the French top down with warm soapy water for a more thorough cleaning and to increase its longevity.
Cleaning the griddle top. Clean the griddle’s top with a grill block at the end each day. Degrease the grid once per week. Also, re-season the griddle as needed.
Cleaning a hot top. When the surface of your hot top is still warm, use a coarse cloth like burlap to wipe it down and remove any food that has been burned. If excessively dirty, the hot top should be removed and washed in a sink of warm, soapy water. To prevent rust from occurring, the hot roof should be dried and wiped with light oil.
Cleaning gas open burners. Burner grates must be removed at the end each day. A wire brush should be used to clean the burner ports. This is the part where the flame exits. If any of the holes are clogged, the burner should be removed and cleaned more thoroughly to assure a proper flame. The flame must also be blue and steady. It should also be steady and not jumpy. Monitoring the Flame and Electric Elements to Ensure Proper Heating
Check flame on commercial gas ranges. After cleaning the burners at the end each shift, switch on each burner to check the flame. The flame should be steady and blue.
Turn off the burner if the flame seems jumpy. Adjust the screw that holds the flame shutter. It is worth checking again.
Make a schedule for cleaning, calibrating commercial ovens, checking commercial refrigerator temperatures, descaling dish machines and any other type of commercial equipment upkeep.
Open the shutter slightly if the flame is too yellowed or white to ensure adequate airflow.
Once you have the flame where you want it, tighten the screw around the shutter.
If the pilot fails to stay lit, the port might be blocked. It should be cleaned with the range unplugged.
