Cleaning Tips for Cleaning Range Tops
Commercial ranges come in many different top styles. To maintain their cooking efficiency, each top needs to be cleaned differently.
Cleaning a French top. Spot clean during the day to wipe any spills and maintain heat transmission. The French top should be wiped clean with warm soapy liquid at the end to ensure it lasts longer.
Clean a griddle’s top. Clean the griddle surface with a grill brick at the end of each working day. Re-season the grddle as necessary.
Clean a hot top. When the surface of your hot top is still warm, use a coarse cloth like burlap to wipe it down and remove any food that has been burned. If excessively dirty, the hot top should be removed and washed in a sink of warm, soapy water. After drying, the hot top should be wiped down with a light coat of oil to prevent rust.
Cleaning gas open burners. The burner grates must be taken out, cleaned, and dried at the end of each day. The burner ports, where the flame enters, should also be cleaned using a wire brush. The burner should be taken out if any holes become blocked. Blue and steady flames are also desirable. If it becomes jumpy, yellowish, or white, the gas/air mixture could be wrong. Monitor Flame and Electric Elements to Ensure Proper Heating
Commercial gas ranges should be checked for flame. After cleaning the range at the end of a shift, turn on each burner one at a time and check the flame. What you should see is steady blue flame.
Turn off the burner if it is causing a jumpy flame. Then adjust the screw to close the flame shutter. It is worth checking again.
Schedule cleaning and calibration of commercial ovens, testing commercial refrigerator temperatures, descaling dish machine, and other maintenance tasks.
If the flame is to yellow or white, open the shutter just a tiny bit to ensure proper air flow.
Once the flame is where you want it to be, tighten the shutter.
If the pilot fails to stay lit, the port might be blocked. The port should be cleaned and unplugged.
