Range Top Cleaning Tips
Commercial ranges come in many different top styles. To maintain their cooking efficiency, each top needs to be cleaned differently.
Cleaning a French Top. Spot cleaning is important throughout the day to clean up any spillages and preserve heat transfer. The French top should be wiped clean with warm soapy liquid at the end to ensure it lasts longer.
Clean a griddle’s top. Use a grill brick to clean the griddle top at the end every day. Then, once a week, remove any grease from the griddle. As needed, you can also re-season your griddle.
Cleaning a hot top. When the surface of your hot top is still warm, use a coarse cloth like burlap to wipe it down and remove any food that has been burned. The hot top should be taken off if it is too dirty. To prevent rust, it is recommended that the hot top be cleaned with a light coating of oil.
Cleaning gas open burners. Burner grates must be removed at the end each day. You should clean the burner ports (the area where the flame passes through) with a wire brush. To ensure a flame, it is important to clean out any clogs in the burner. The flame must also be blue and steady. Monitor Flame and Electric Elements to Ensure Proper Heating
The flame of commercial gas ranges must be checked. After cleaning out the range, turn each burner on one by one and inspect the flame. What you should see is steady blue flame.
If you notice a jumpy flame, turn off your burner and adjust that screw that locks the flame shutter. You can check it again and make any necessary adjustments.
Schedule cleaning and calibration of commercial ovens, testing commercial refrigerator temperatures, descaling dish machine, and other maintenance tasks.
If the flame is to yellow or white, open the shutter just a tiny bit to ensure proper air flow.
Once you get the flame exactly where you want, tighten your shutter.
If the pilot doesn’t stay lit, then the port is clogged. It should be cleaned with the range unplugged.
