Cleaning Tips for Cleaning Range Tops
There are many top options for commercial ranges. Each top must be cleaned in a specific way to preserve its cooking efficiency.
Cleaning a French Top. Spot clean throughout the day in order to wipe up spillages and maintain heat transfer. The French top should be wiped clean with warm soapy liquid at the end to ensure it lasts longer.
Cleaning a grild top. After each day, clean the top of the griddle with a grill brick. Once a week, degrease it. Re-season the grddle as necessary.
Cleaning a hot stove top. The cooking surface should be slightly warm. Use a coarse cloth, such as burlap, to wipe it clean and remove any food residue. The hot top should be taken off if it is too dirty. To prevent rust, it is recommended that the hot top be cleaned with a light coating of oil.
Cleaning gas open burners. Burner grates must be removed at the end each day. The burner ports, where the flame enters, should also be cleaned using a wire brush. To ensure a good flame, any blocked holes should be cleaned out and the burner removed. Also, the flame should be steady and blue. Monitor Flame and Electric Elements to Ensure Proper Heating
Verify the flame on commercial gas ranges. After cleaning the range after each shift, turn on each burner individually and check the flame. You should see a steady blue flame.
If the flame becomes jumpy, switch off the burner and adjust the bolt that locks the flame shutter. You can check it again and make any necessary adjustments.
Create a schedule to clean, calibrate, check commercial oven temperatures, descaling dishes machines, and any other maintenance of commercial equipment.
The shutter can be slightly opened if the flame is too bright or yellow. This will allow for proper airflow.
Once you’ve got the flame where it should be, tighten up the shutter.
If the pilot does not stay lit, it is likely that the port has become clogged. The port should be cleaned and unplugged.
