Range Top Cleaning Tips
There are several different top configurations for commercial ranges, and each top has to be cleaned in a particular manner in order to maintain its cooking efficiency.
Cleaning a French top. Spot clean during the day to wipe any spills and maintain heat transmission. At the end of the day, wipe the French top down with warm soapy water for a more thorough cleaning and to increase its longevity.
Clean a griddle’s top. Use a grill brick to clean the griddle top at the end every day. Then, once a week, remove any grease from the griddle. You can also reseason the griddle if necessary.
Clean a hot top. While the cooking surface is still slightly warm, wipe it down with a coarse cloth (like burlap), and scrape off any burnt-on food. The hot top should be taken off if it is too dirty. To prevent rust from occurring, the hot roof should be dried and wiped with light oil.
Cleaning gas open burners. Burner grates must be removed at the end each day. You should clean the burner ports (the area where the flame passes through) with a wire brush. To ensure a good flame, any blocked holes should be cleaned out and the burner removed. Blue and steady flames are also desirable. If it is jumpy, yellow or white, a port may be clogged or the gas-to-air mixture is wrong. This mixture can be adjusted by consulting the owner’s manual.
To Ensure Proper Heating, Monitor Flame And Electric Elements
The flame of commercial gas ranges must be checked. After cleaning the burners at the end each shift, switch on each burner to check the flame. What you should see is steady blue flame.
If the flame is jumpy, turn off the burner, and adjust the screw that secures the flame shutter. You can check it again and make any necessary adjustments.
You can create a schedule for cleaning commercial ovens, calibrating them, checking their temperatures, descaling dish-machines, and any other equipment maintenance.
The shutter can be slightly opened if the flame is too bright or yellow. This will allow for proper airflow.
Once the flame is where you want it to be, tighten the shutter.
If the pilot is not lit up, the port is blocked. It should be cleaned out with the range unplugged.
