Cleaning Tips For Range Tops
There are several top configurations available for commercial ranges. Each top should be cleaned in a different way to ensure its cooking efficiency.
Cleaning a French top. Spot clean throughout the day to wipe up any spills and maintain heat transfer. Wipe the French top clean with warm soapy waters at the end. This will give it a deeper clean and increase its durability.
Cleaning a top griddle. Clean the griddle’s top with a grill block at the end each day. Degrease the grid once per week. Also, re-season the griddle as needed.
Cleaning up a hot-top. You can clean a hottop while it’s still warm. The hot top should be taken off if it is too dirty. To prevent rust, it is recommended that the hot top be cleaned with a light coating of oil.
Cleaning gas open burners. The burner grates must be taken out, cleaned, and dried at the end of each day. Also, the burner ports (the part the flame comes through) should be cleaned with a wire brush. To ensure a proper flame, remove any obstructions from the burner and clean them more thoroughly. Also, the flame should be steady and blue. The port could be blocked or the gas-to air mixture may not be working properly if it’s jumpy, yellow, or white. Monitor Electric Elements and Flame to Ensure Proper Heating
Commercial gas ranges should be checked for flame. After cleaning the range after each shift, turn on each burner individually and check the flame. The flame should be steady and blue.
If you notice a jumpy flame, turn off your burner and adjust that screw that locks the flame shutter. Check it again, and make any tweaks necessary.
Create a schedule to clean, calibrate, check commercial oven temperatures, descaling dishes machines, and any other maintenance of commercial equipment.
The shutter can be slightly opened if the flame is too bright or yellow. This will allow for proper airflow.
Once you’ve got the flame where it should be, tighten up the shutter.
If the pilot fails to stay lit, the port might be blocked. It should be cleaned with the range unplugged.
