Cleaning Tips For Range Tops
There are many types of tops for commercial ranges. Each one must be cleaned in an appropriate manner to maintain its cooking efficiency.
Cleaning a French top. Spot clean during the day to wipe any spills and maintain heat transmission. For a deeper cleaning and longer lasting results, wash the French top with warm soapy water at the end of each day.
Cleaning a grild top. Clean the griddle surface with a grill brick at the end of each working day. Season the griddle as often as you need.
Cleaning a hot stove top. The cooking surface should be slightly warm. Use a coarse cloth, such as burlap, to wipe it clean and remove any food residue. If the hot top is excessively dirty, you should remove it and wash it in warm, soapy running water. To prevent rust, it is recommended that the hot top be cleaned with a light coating of oil.
Cleaning gas open burners. After each day, it is important to remove, clean, and dry the burner grates. Also, the burner ports (the part the flame comes through) should be cleaned with a wire brush. To ensure a flame, it is important to clean out any clogs in the burner. The flame should also be blue and steady. Monitoring the Flame and Electric Elements to Ensure Proper Heating
Check flame on commercial gas ranges. After cleaning the range after each shift, turn on each burner individually and check the flame. A steady, blue flame is what you should expect.
If the flame is jumpy, turn off the burner, and adjust the screw that secures the flame shutter. Recheck it and make any adjustments if necessary.
You can create a schedule for cleaning commercial ovens, calibrating them, checking their temperatures, descaling dish-machines, and any other equipment maintenance.
If the flame is to yellow or white, open the shutter just a tiny bit to ensure proper air flow.
Once the flame is where you want it to be, tighten the shutter.
If the pilot doesn’t stay lit, then the port is clogged. It should be cleaned with the range unplugged.
