Cleaning Tips For Range Tops
Commercial ranges come in many different top styles. To maintain their cooking efficiency, each top needs to be cleaned differently.
Cleaning a French top. Spot clean throughout the day in order to wipe up spillages and maintain heat transfer. Wipe the French top clean with warm soapy waters at the end. This will give it a deeper clean and increase its durability.
Cleaning a top griddle. After each day, clean the top of the griddle with a grill brick. Once a week, degrease it. You can also reseason the griddle if necessary.
Clean a hot top. While the cooking surface is still slightly warm, wipe it down with a coarse cloth (like burlap), and scrape off any burnt-on food. If the hot top is excessively dirty, you should remove it and wash it in warm, soapy running water. To prevent rust, you should wipe the hot top with oil after drying.
Cleaning gas open burners. The burner grates must be taken out, cleaned, and dried at the end of each day. A wire brush should be used to clean the burner ports. This is the part where the flame exits. If any of the holes are clogged, the burner should be removed and cleaned more thoroughly to assure a proper flame. The flame should be bright and steady. If it becomes jumpy, yellowish, or white, the gas/air mixture could be wrong. To adjust the mixture, consult the owner’s handbook.
Monitoring Flame and Electric Elements Is Necessary To Ensure Proper Heating
On commercial gas ranges, check the flame. After cleaning out the range, turn each burner on one by one and inspect the flame. You should see a steady blue flame.
If the flame becomes jumpy, switch off the burner and adjust the bolt that locks the flame shutter. It is worth checking again.
You can create a schedule for cleaning commercial ovens, calibrating them, checking their temperatures, descaling dish-machines, and any other equipment maintenance.
Open the shutter slightly if the flame is too yellowed or white to ensure adequate airflow.
